Beta Overheating

I know there are several posts similar to this but putting them together was difficult.

I have a 08 rev3 250. Have ridden it a few times for about 10 mins and as far as I can remember the fan worked and bike was quiet.

Rode it today for about an hour in total. After about 20 mins could hear a rattle/tapping noise. Couldn't find it, but it seemed to be more prominent when bike was being tipped to turn. Anyway no changes in power or tell tale signs of overheating. I Stopped again to check and when looking for rattle could smell coolant. Pushed bike back to garage and checked following. The fan was not coming on.

Fan - linked the two wires and fan works

Coolant Level - added a small amount and radiator was full. Ran bike, coolant was still and not disturbed

Drained coolant, appears to be correct qty. impeller looks good and when kick start is pushed impeller turns.

Removed thermostat, carried out the boiling water test and it clicks.

Any ideas, am confused now.

Quick update to finish this off

Impellor fine

Cleaned connections and fan fine

Thermostat fine

First ride and could smell coolant again. Checked the radiator and saw that the fins were caked with mud. Power washed them through and job done.

Rode for an hour or so again, then the knocking noise came back. Put fuel on to reserve and it went. I think low fuel was the noise first time around.
