Can any of you guys give me some advice on the adjustment setting on my Montesa

It is a 2003 with the adjuster on the top of the fork at one side

Could you tell me what this does and what ball park setting it should be at (how many clicks)

Also the back shocker,as i am a 16 stone lump it sit down alot when i am on it,is it possible to raise the rear height or just stiffen it up etc
