I was wondering how i can find out the date of birth for my GasGas 250 txt from the vin number or some were else on the bike?

Not sure how to get the date of manufacture from the VIN, but http://gasgasmuseum.com/ may give you a good idea of what year it is by looking at the pictures. Just click on a year and take a look.
