I have a 2001 txt 250.
The bike starts fine with the choke on warm or cold start, but say I've been on it for an hour or so and i decide to stop to drink or rest etc. The bike still won't start unless I put the choke on !! It's a nightmare.
Could it be carb settings? Such as the Fuel/Air mixture is too lean ?

Yes - I would clean the pilot jet, check the float level (might be too low) and check the fuel screw setting.
